Ingredients for 10 people
1 kg of flour 00
4 whole eggs
4 red eggs
1 teaspoon of extra virgin olive oil
Salt as needed
To prepare the fresh pasta, you need to gradually pour the flour into a bowl or directly onto a wooden pastry board, form a vortex, add the whole eggs and red wines, work with a fork and once the liquid part is ready, knead until a smooth and very compact dough is formed.
We need to wrap the dough in plastic wrap and let it rest for 30 minutes at room temperature.
Once the dough is ready, you will need to roll out the dough with a rolling pin and then cut it with a knife so that the dough is about 1 cm in size to make the noodles.
