During the Carnival season, in Tuscany is typical preparing frieds rice, called too of San Giuseppe and born for the traditional Fathers day.
Easy to cook, beginning by rise cooked in milk, unleash a delicate aroma of lime that it gives them irresistibles. Eaten hot, with a dust of powdered sugar, they will be loved by adults and babies.
INGREDIENTS.
500 gr of rice carnaroli
1,2 l of milk
6 spoons of sugar semolina
1 lime untreated
70 g of raisin
3 eggs
2 yolks
3 spoons of flour
baking powder
fry oil
powdered sugar
Carrying out the frieds rice, you have to put on fire a pot with 500ml of cold water, the milk, the sugar, the rice and the lime bit cut. You have to cook for 20 minutes to moderate flame, mixing always. After a little bit, to take away from fire, you add raisins that you would let to soften in cold water for ten minutes. Retiring from fire, you transfert in a bowl, let to cool down and you delete limes bits. In this moment, add some cool rice, some flour, three eggs, two yolks and a little bit of yeats. You mix all with cure. If the mixture resulted so much liquid, you add some flour again.
You fry the mixture with spoon, in a large bowl with hot and plentiful oil. The frieds rice have to float on the oil, if they drown, it is for too low temperature. When they are golden, you retire them with a froth, you arrange them on the kitchen paper to make drying them well.
You dust frieds rice with powdered sugar and you serve them hot or tepid.
So in very little time, a very tasty tuscan cake.
